I’ve always loved rye. For some reason, growing up it seems like we always had a loaf of rye bread and yellow mustard in the house which counted as a snack. Probably strange, but true.
When I visited Sweden a couple of years ago, rye was on the menu often. I recall getting back in town and buying a bag of whole-grain rye flour immediately to play around with. Now I use it often in my baking. It makes for surprisingly tender breads and muffins, or in today’s case, wholesome and toasty waffles.
My inspiration for this scrummy breakfast was the maple syrup I picked up at the Farmer’s Market yesterday. It’s from Burton’s Maplewood Farm and is deep and pure and delicious.
This recipe makes enough for 8 hearty waffles. I like to freeze the leftovers for whenever the mood strikes. For my next trick, I’m thinking of swapping in a whole sweet potato and leaving out the banana for more savory applications.
Sweet Potato Rye Waffles
Makes 8 waffles
Ingredients:
- 2 cups whole-grain rye flour (could also use whole-wheat for a fluffier waffle)
- 2 cups milk (I used unsweetened flax milk)
- 1 very ripe banana
- 1/2 sweet potato, baked
- 2 eggs
- 1 tbsp. vanilla
- 1 1/2 tbsp. baking powder
- 1/8 tsp salt
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- Non-stick spray (I used coconut oil spray)
- Toppings (pure maple syrup, jam, fruit, chocolate chips, nuts…)
Method:
Preheat waffle iron.
In one bowl, mix together the dry ingredients: rye flour, baking powder, and spices. In a separate bowl, first mash together the sweet potato and banana. It’s difficult to be exact with fruits and veg, but you should have about 3/4 cup. I had a leftover baked sweet potato in the fridge and was able to just scoop out what I needed. Once mashed, stir in eggs, vanilla, and milk. Pour the dry ingredients into the wet ingredients and mix until combined.
Lightly spray the waffle iron with non-stick spray and then pour about 1/2 cup batter onto the iron. Close and cook until the steam stops, or when the green light comes on like mine 🙂
Repeat with the remaining batter. This recipe will make about 8 waffles. Top with pure maple syrup, fruit, or whatever other toppings tickle your fancy.
