• Healthy 3-Ingredient Peanut Butter Cookies

These healthy little nuggets are amazing! Made up of only peanut butter, dates, and an egg (+ a dip in dark chocolate if you’re so inclined), they are definitely a treat you can feel good about. I enjoyed these while watching Great British Bake-off with a cup of black, pumpkin-flavored coffee and it was the scrummiest delight 🙂 Peanut Butter-Date Cookies Yield: about 14 cookies Ingredients: 1 cup natural peanut butter 1 cup dates (8 oz.) 1 egg Optional: Dark chocolate (I used this 88% bar) Flaked sea salt Method: Preheat oven to 350 degrees. Line a baking sheet with a slipmat or parchment paper. If your dates are hard…

  • Zucchini-Oat Chocolate Chip Muffins

These muffins are wholesome, tasty, and filling–perfect for breakfast or an anytime snack. Plus, they are an insanely delicious way to get in a veggie serving without even trying. The zucchini, dates and oats give you something to feel good about; and the chocolate chips give you something to look forward to 😉 Keep in mind that they won’t rise a ton like regular flour muffins, but they are super tender on the inside. I filled my cups almost all the way to the top, which yielded 12 hearty and beautiful muffins. One note–baking times will vary depending on how much moisture was in your grated zucchini. Be patient and…

  • Grain-Free Banana Date Bread

A classic banana bread, healthified. It’s what I do. This bread is super yummy, especially with a cup of coffee, for breakfast, dessert, or a cozy anytime snack. It is sweetened entirely with fruit, and has protein and fiber from the eggs and almond meal. All good stuff y’all! It is perfect as-is, but can be easily modified as well. Add-ins like chocolate chips or pecans would be great, and swapping the cinnamon for cardamom or other warm spices would also be lovely. Enjoy! Grain-Free Banana Date Bread Ingredients: 1 1/2 cups almond meal 1/4 cup arrowroot flour 3 tbsp coconut flour 2 tbsp cinnamon 1 tsp baking powder 1…

  • Sun-Butter Date Truffs

I missed the “knock-off Reese’s egg” boat during Easter time, but still wanted to try my hand at making a healthy, date-sweetened version. So I made these on a recent rockin’ Friday night and shaped them like truffles instead of eggs. They turned out divine. Super luscious and perfectly sweet on the inside, with a satisfying bitter crunch on the outside from the dark chocolate and salt. A super rich and delicious dessert that you can feel good about. Sun-Butter Date Truffs Makes about 12 truffles Ingredients: 100 grams dates (about 7 dates) 80 grams water (about 1/3 cup) 65 grams sunflower seed butter (1/4 cup) 50 grams coconut flour…

  • Chocolate-Cherry Cake with Raspberries & Ganache

I’m constantly creating recipes or tweaking existing recipes to highlight fruit as the primary sweetener. I don’t even own a bag of white or brown sugar. Dates are a consistent favorite of mine, but I’ve recently been reminded of just how amazing and versatile a bag of frozen cherries can be. I love concocting fun cakes and since we had a family birthday coming up, I decided on a fancy chocolate cake (at least fancier than my usual chocolate snacking cake). I found a great recipe online for a grain-free chocolate cake and decided to switch it up with some swaps. Instead of coconut sugar and maple syrup, I pureed…

  • Pecan-Walnut Butter

Have you ever made your own nut butter? If you haven’t, now is the time. It is super easy to do and FUN because you can come up with any flavors you like. This butter is made with a mixture of pecans, walnuts, a few dates and cinnamon for sweetness. Next time I think I’ll make pecan butter brownies, but today, I think I’ll just slather it on some apples and call it a day. 🙂 Pecan-Walnut Butter Ingredients: 12 oz. raw pecans and walnuts 5 dates 1 tsp cinnamon 1/2 tsp salt Method: Pre-heat oven to 350 degrees F. Toast nuts for 8 minutes, then allow to cool for…

  • Almond-Date-Chocolate Energy Balls

I made up an energy ball recipe and it turned out really well. I’m so proud! Most energy ball recipes I’ve seen, or energy balls I’ve tried at coffee shops are far too sweet. There’s nothing that irks me more than recipes that represent themselves as “healthy” and “sugar free” but contain a cup or more of maple syrup or honey. That is a lot of sweetness. These energy balls are sweetened with a few dates, my favorite 🙂 and just 2 tablespoons of dark chocolate chunks. They are just sweet enough, nutty, toasty, and a lovely pick-me-up. I found them to be a perfect treat with my afternoon coffee.…

  • Tahini-Date Chocolate Chip Cookies

I’m not going to say too much here, because I know how it feels to scroll through the blah-blah-blah’s to get to the good part of a post—-the recipe! Plus, these cookies need no introduction. They are insanely delicious, have an addicting texture, and are sweetened only with dates and bittersweet chocolate. You have officially found your guilt-free indulgence, so stop looking and start baking. Tahini-Date Chocolate Chip Cookies Ingredients: 1 cup almond flour 1/3 cup date syrup (I used Date Lady Date Syrup) 1 cup tahini 1 tbsp espresso powder 1 egg 1/4 tsp baking soda 1/2-3/4 cup bittersweet chocolate chips (I used Ghirardelli) Method: Mix together almond flour,…

  • Healthy Banana Bread (sweetened with dates)

The base recipe for this loaf is is my absolute favorite for quick breads. And bananas (plus choco chips most times) is my absolute favorite type of quick bread. Easy, super healthy, and completely delicious. Enjoying this bread with coffee in the morning before I face the world is the only thing that makes me a civilized human being some days. This recipe is essentially the same as my pumpkin bread, just swapping pumpkin for bananas and mixing up the spices a bit. I also used oat flour this time, which makes it even more breakfast-y. This bread literally gets me out of bed in the morning I look forward…

  • Chocolate Gingerbread Cake (sweetened with dates!)

Gingerbread has got to be one of my favorite flavor profiles.  Warm, sweet spices like clove, cinnamon, ginger, and anise win me over every time.  They’re like a cozy blanket and mug of something toasty. Gingerbread spices also remind me of a trip I took to Stockholm a couple of years ago during Christmas-time.  I already had a proclivity towards Swedish culture before going, but after … let’s just say I seriously considered switching careers. In addition to everything else I love about Sweden (hello quiet streets! We were definitely the loud Americans), you can hardly walk two feet without bumping into some cozy little bakery wafting cinnamon and cardamom…
