Every weekend I go through the same song and dance with myself.. an exhausting internal monologue (sometimes it’s aloud if I’m honest) that involves arguing over whether I should get a chocolate croissant from the patisserie or make something at home.
I go through the the cost/benefit analysis, the nutrition/lack thereof analysis, the time/energy analysis… comprehensive analyses are kinda my thang.
Depending on the weekend, it could go either way. Though more times than not, I end up tinkering on something at home.
Today, I tinkered. Oh yes, I tinkered. My goal is always, yummy and decadent with ingredients that I feel good about. The magic of nut butters in baking, particularly their ability to act as replacements for flour, is quite a thing to behold. These bars are entirely flour free, but with the fluffiness that comes from the PB, egg and baking soda, you’d never know! They are also only comprised of 6 simple ingredients which is a pretty beautiful thing too.

Chocolate Chip-Peanut Butter Bars
Makes 8-inch square pan
Ingredients:
- 1 cup natural peanut butter
- 1/3 cup honey
- 1 egg
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/3 cup dark chocolate chips
Method:
Stir together peanut butter, honey, and salt. I microwaved my honey for about 30 seconds to make it more pourable and easier to combine–only do this if your honey is in a glass jar though, plastic ones warp in the microwave.
Stir in egg and baking soda, then fold in chocolate chips. Pour into a parchment paper lined 8-inch baking pan and bake at 350 for 18 minutes. Cool, cut and enjoy! 🙂
