• Maple-Pecan Granola with Cherries

Making granola is SO easy. I forget how easy and satisfying it is until I do it again. It’s what prevents me from ever buying store-bought stuff–I just can’t justify the price and there is usually wayyyy too much sweet stuff. I just need a smidgey-bidge of sweet. This recipe is a great one to have in your arsenal. I’ve made it for last minute brunches–yogurt bars are great! I make a batch for meal-prep and bring a little every day to work. I also just like having it around. You never know when HANGER will strike and having a healthy carb around is necessary. It is perfect on top…

  • Sun-Butter Date Truffs

I missed the “knock-off Reese’s egg” boat during Easter time, but still wanted to try my hand at making a healthy, date-sweetened version. So I made these on a recent rockin’ Friday night and shaped them like truffles instead of eggs. They turned out divine. Super luscious and perfectly sweet on the inside, with a satisfying bitter crunch on the outside from the dark chocolate and salt. A super rich and delicious dessert that you can feel good about. Sun-Butter Date Truffs Makes about 12 truffles Ingredients: 100 grams dates (about 7 dates) 80 grams water (about 1/3 cup) 65 grams sunflower seed butter (1/4 cup) 50 grams coconut flour…

  • Chocolate-Cherry Cake with Raspberries & Ganache

I’m constantly creating recipes or tweaking existing recipes to highlight fruit as the primary sweetener. I don’t even own a bag of white or brown sugar. Dates are a consistent favorite of mine, but I’ve recently been reminded of just how amazing and versatile a bag of frozen cherries can be. I love concocting fun cakes and since we had a family birthday coming up, I decided on a fancy chocolate cake (at least fancier than my usual chocolate snacking cake). I found a great recipe online for a grain-free chocolate cake and decided to switch it up with some swaps. Instead of coconut sugar and maple syrup, I pureed…

  • Lemon-Blueberry Almond Flour Scones

Weekends are for baking, but I’m not about to compromise my nutrition standards for it. These scones are both delicious and nutritious. They are made entirely with almond flour, giving them a lovely light and tender texture. They are also not-too-sweet, a little zesty and just perfect with coffee in the morning. Lemon-Blueberry Almond Flour Scones Ingredients: 2 3/4 cup almond flour (plus extra for cutting out scones) 1/2 tsp baking soda 1/4 tsp salt Zest from a lemon 2 tbsp cold butter 2 eggs 1 tbsp lemon juice 1 tbsp buttermilk or other milk product (plus a splash extra for topping scones) 1 tbsp honey 1/3 cup blueberries Optional:…

  • Pecan-Walnut Butter

Have you ever made your own nut butter? If you haven’t, now is the time. It is super easy to do and FUN because you can come up with any flavors you like. This butter is made with a mixture of pecans, walnuts, a few dates and cinnamon for sweetness. Next time I think I’ll make pecan butter brownies, but today, I think I’ll just slather it on some apples and call it a day. 🙂 Pecan-Walnut Butter Ingredients: 12 oz. raw pecans and walnuts 5 dates 1 tsp cinnamon 1/2 tsp salt Method: Pre-heat oven to 350 degrees F. Toast nuts for 8 minutes, then allow to cool for…

  • Seeded Spelt Bread

You should know, that I am a bread person. Deeply and unapologetically. Perhaps one might even define me as a bread snob. I respect those that make white flour varieties like baguettes and brioche, but those aren’t what get my engines going. The breads I love are the ones that are difficult to master, and the most delicious to eat. Particularly, whole grains, ancient grains, seeded, and fermented varieties. The ones with respectable chew, tons of nutrients, and loads of flavor. The recipe I’m sharing in this post is very exciting because it is all of those things I just described loving above, yet it is super easy to make.…

  • Almond-Date-Chocolate Energy Balls

I made up an energy ball recipe and it turned out really well. I’m so proud! Most energy ball recipes I’ve seen, or energy balls I’ve tried at coffee shops are far too sweet. There’s nothing that irks me more than recipes that represent themselves as “healthy” and “sugar free” but contain a cup or more of maple syrup or honey. That is a lot of sweetness. These energy balls are sweetened with a few dates, my favorite 🙂 and just 2 tablespoons of dark chocolate chunks. They are just sweet enough, nutty, toasty, and a lovely pick-me-up. I found them to be a perfect treat with my afternoon coffee.…

  • Whole-Wheat Maple Banana Bread

Three brown bananas are sitting on the counter … not actually a joke, just the most common way my baking adventures begin. Although if you have a punchline to that beginning, by all means provide it in the comments. This recipe, however, is no joke. It is an easy-to-toss-together and delicious bread that never fails me. I literally threw this together during a commercial break (one of the few benefits of commercial breaks). I love having a nourishing baked good at the start of the week to get me through, but this is a delicious choice for anytime. Whole-Wheat Maple Banana Bread Recipe adapted from Cookie + Kate Ingredients: â…“…

  • Almond Butter Brownies

A great small batch of decadent brownies for when you want, nay NEED, a treat that’s more indulgent than the healthiest option (see, e.g. sweet potato-protein varieties), but still healthier than your traditional sugar-butter brownies. These are made with almond butter, whole-wheat, maple syrup, and dark chocolate, and only make a half batch. Healthy fats, protein, and fiber with all the sweetness you need, so perfect! Almond Butter Brownies Adapted from Dessert for Two Ingredients: 1/3 cup unsweetened cocoa powder 3/4 cup almond butter 1/2 cup pure maple syrup 1 tbsp olive oil 3 tbsp whole-wheat flour 1/2 tsp baking soda 1/8 tsp sea salt, plus more for topping 1/4…

  • Tahini-Date Chocolate Chip Cookies

I’m not going to say too much here, because I know how it feels to scroll through the blah-blah-blah’s to get to the good part of a post—-the recipe! Plus, these cookies need no introduction. They are insanely delicious, have an addicting texture, and are sweetened only with dates and bittersweet chocolate. You have officially found your guilt-free indulgence, so stop looking and start baking. Tahini-Date Chocolate Chip Cookies Ingredients: 1 cup almond flour 1/3 cup date syrup (I used Date Lady Date Syrup) 1 cup tahini 1 tbsp espresso powder 1 egg 1/4 tsp baking soda 1/2-3/4 cup bittersweet chocolate chips (I used Ghirardelli) Method: Mix together almond flour,…
